Pour the lemon juice over 4 egg yolks beaten until smooth, then mix in 1 cup sugar, 2 tablespoons all-purpose flour, 1 teaspoon grated lemon peel (add more if you like it extra tart), and 7 tablespoons butter. Bring this mixture to a simmer on low heat, constantly stirring with a whisk or wooden spoon. Now add your prepared pastry or refrigerated pie crusts into the oven at 350 degrees for 20 minutes, then 350 degrees for 10 minutes more.
